D.O.P. Oli de Mallorca


Because of its long history (historical references indicate that during the thirteenth century Mallorca already exported olive oil to North Africa), its differentiated quality and the consumers' recognition, this is one of the most representative traditional products from Mallorca. It is made of the variety Mallorquina (also known as Empeltre), Arbequina and Picual and goes through a process that retains the characteristics of the fruit from which it is made. The weather in this region requires an advanced harvest and the orographic situation (mountainous and rugged properties of hundred-year-old olive trees), requires a reduced high quality production.

As in other protected designations of origin, two kinds of oil are produced depending on the olive harvest time. The first one is produced first and obtained from green and healthy olives. It is fruity, more aromatic and has bitter and piquant notes. The other one, obtained from a later harverst, is obtained from ripe olives. It stands out for its sweetness and softness, for its lower bitterness and subtler piquant notes and its golden yellow colour.
