D.O.P. Oli de Mallorca
As in other protected designations of origin, two kinds of oil are produced depending on the olive harvest time. The first one is produced first and obtained from green and healthy olives. It is fruity, more aromatic and has bitter and piquant notes. The other one, obtained from a later harverst, is obtained from ripe olives. It stands out for its sweetness and softness, for its lower bitterness and subtler piquant notes and its golden yellow colour.
