This producer is a founding member of Grandes Pagos de Olivar, a pioneer Spanish association that aims to achieve the perfection in the elaboration of Extra Virgin Olive Oils. This olive oil is produced in Torroella de Fluvià (Alt Empordà) with the varieties arbequina, hojiblanca and koroneiki (original from Greece). Thanks to the harvest and extraction techniques, this oil keeps high levels of oleic acid and antioxidants. The whole elaboration process follows the parameters of integrated production. The work in the olive groves is conducted with a maximum respect of the environment and the grass is kept in the soils to avoid erosion and favour the reproductive cycles of beneficial insects. The fruits are manually harvested and pressed within the next two hours.
Tasting report
Green yellowish dull colour, due to the fact that it has not been filtered. In the nose, it shows very intense notes of green tomatoes, artichokes, green bananas, mandarins, pears, olives, bitter almonds and pistachios. In the mouth it has an embracing intense fruity with light piquant and bitter notes. It is a very complex olive oil with a long aftertaste.
