Olive oil produced in Dilar, within Sierra Nevada National Park, in the province of Granada, a region with a long olive oil production tradition in which the most typical olive variety is called picual. The production system is endorsed with the Certificate of Quality and the Integrated Production Seal, both granted by the Regional Government of Andalusia. This oil is produced in very modern and new mill, administered by the family Gil Velasco. Due to the property's geographic situation, at 1000 m altitude, and so as to avoid the damage that can be caused by snowfalls and frosts, the olives are harvested in October, when they still show a green colour.

Tasting report

Dominant green tones, fruity flavours of apples, tomato plants and green grass, reminiscent of intense aromas of almonds and nuts also. In the mid palate, a light astringency and a very subtle bitter nuance are felt along with a final piquant touch with a very light intensity.
