Oil produced by the Vañó family for generations. It is named after the castle owned by thi family in Canena, Jaén, which was built by the Arabs on the ruins of an ancient Roman fort. The family manages the whole process of the elaboration of this olive oil and its distinguished presentation personally. In this olive groves located in a estate called El Conde de Guadiana, arbequina and picual olives are grown according to the rules of an integrated production. For generations it was usual to keep the best part of each variety's harvest for the family. Nowadays, the oil of both varieties obtained exclusively from the olives harvested on the first day is marketed in limited and numbered editions. The 10.000 opaque red-cherry-coloured 10.000 bottles of the annual limited edition from the first day harvest have become a benchmark all over the world.
Tasting report
This oil shows a fresh olives fruity reminiscent of harmonious notes of grass and green fruits, with almonds at centre stage. It is a well-bodied oil with its own personality, whose flavours boost volatile aromas (which is quite unusual in the case of traditional arbequina olive oils). It has a soft attack, which gives way to an increasingly bitter and slightly piquant palate.
