Elaborated from Arbequina olives in Sarroca of Lleida, near Les Garrigues, Lleida, under strict control of almost 10,000 olive trees, some of them centuries old. Its name means in Catalan starling, a bird that feeds on olives, thus helping in their own way, in times of harvest. The selection process of the olives is hand beaten or discarding the cuts that favor the oil oxidation process. This brand was a pioneer in Spain in organic farming, while still no laws about it. Grown under the control and certification of the CCPA, the Catalan Council of Ecological Agricultural Production. Certification is achieved after three years of cultivation, which is the time required to remove the sulfates land previously used. In this region of very cold winters, it forms a layer of frost on the olive trees that eliminates all insects.
